Easy Vegan Brownie Recipe & Vegan Biscoff Brownie Recipe

I have been completely dairy free and egg free for over a year now, with absolutely no cheating whatsoever. The thing I have missed most during that time is dessert.

If we go out to eat I usual choose vegan Desserts as naturally they are dairy and egg free. I love the hot vegan apple crumble with hot soya custard at the Toby Carvery. If we got to Southend for thr day I love the chocolate ice cream from Rossi’s. On the whole though, Vegan pudding options are really limited & sometimes consists of just fruit. Don’t get me wrong, I like fruit, but it’s not dessert! To me, dessert is a treat!

With the limited options for getting dessert out, I was overjoyed when my boss sent a Vegan Biscoff brownie by post from Brownie Heaven when I had completed a training course with 100%.

Brownie Heaven – Vegan Biscoff Brownie

The Vegan Biscoff Brownie was amazing and I have since ordered a further 2. I am definitely going to be ordering more too, but at over £30 a pop they are definitely more something I would order for a special occasion than as a regular treat.

Sitting on the sofa one day, I had a brain wave. Why don’t I try and make my own Vegan Brownie! I tried a few egg substitutes and a few different recipes and then I stumbled across this one which are the most amazing tasting & easy vegan brownies.

These easy Vegan Brownies came out delicious, even Lily & Mike loved them. I honestly think that if you didn’t know then you wouldn’t be able to taste the difference between normal brownies and these easy vegan brownies.

Without further ado, here is the recipe:

EASY VEGAN BISCOFF BROWNIES

INGREDIENTS:

140g Vegan spread, melted (I use Pure Olive Spread)

45g Cocoa powder (I use Bourneville cocoa powder)

225g Granulated sugar

180ml Vegan yoghurt (I use the Alpro soya yoghurt)

100g Plain flour

METHOD:

1.Pre heat oven to 180˚c. 2.Line an 8 x 8 inch tin with greaseproof paper.

3.Melt the butter.

4.Pour the melted butter and cocoa powder into a mixing bowl and whisk together until well combined. It will look very glossy when ready.

5.Add the granulated sugar and whisk. The mixture will now look quite grainy; this is normal!

6.Add the vegan Yoghurt and whisk.

7.Carefully fold in the flour, taking care not to over mix the batter at this point, otherwise the brownies will have a heavy texture.

8.Pour the Vegan Brownie batter into your lined baking tray and bake for 20 to 25 minutes.

Easy Vegan Brownie Serving ideas:

This is a really simple, easy vegan brownie base. You can cut the brownie into large squares and eat them hot with vegan custard or ice cream. You can allow them to cool and cut them into little squares to make vegan brownie bites – the perfect accompaniment to a cup of tea or coffee. You can also top the brownies either with vegan biscoff spread and biscuits or any other topping of your choice.
